Dairy cow farming in Parmigiano Reggiano cheese area: innovation and tradition for a sustainable farming and for high-quality products
1) Re-orient dairy cattle farming in the direction of greater longevity; 2) Assessing animal welfare; 3) Adopt feeding techniques more appropriate to rumen physiology, aimed at increasing health, longevity and fertility of cows; 4) To analyze the economic viability of the business production models based on long-lived cows; 5) Development of new dairy products to enhance the milk produced in the GOI chain high in nutritional content with suitable packaging; 6) Farm technical and economical monitoring and benchmarking.
- Analysis of historical data of the functional checks from Parmigiano-Reggiano area. Survey on feeding techniques in use in the stables belonging to the project.
- Rations adoption with greater use of forages; use of natural substances with antimicrobial and antioxidant activity.
- Food analysis.
- Assessment of compositional characteristics of the milk and of traditional dairy products.

Re-orient the breeding of dairy cattle in the direction of greater longevity, feeding primarily with fiber fodder in line with the dictates of the productive rules of Parmigiano Reggiano Cheese. Apply feeding and management criteria which aim to guide the lactation curves of cows toward achieving production peaks less high but with prolonged phase of persistence, to the benefit of global production in lactation, of cows health, longevity and fertility. In this context, an additional objective is the introduction in the diet, right from the earliest stages of life of calves, of natural substances with antibacterial activity, as opposed to the use of antibiotics, the use of which will be more and more restricted in the future by the EU, for the growing and alarming incidence of antibiotic-resistance. This will allow the reduction of diseases and of use of drugs, with farm economic improvement.
Assess the state of animal welfare in the long-lived cow versus the short production cycle cow. The orientation of the lactation curves of cows toward achieving less high production peaks may result in a better state of health of the dairy cow, resulting in a gross profit improvement of company.
To analyze the economic viability of the company production models based on long-lived cows. The objective is to demonstrate the technical and economic conditions in which the longlived cow is able to produce a similar income to cows with shorter production cycle.
Development of new dairy products to enhance milk produced in the GOI chain with high nutritional content, after careful market analysis and supported by nutritional analyses,sensory and consumer tests. The objective will be fully achieved after the design of a suitable packaging that maintains unaltered the nutritional and sensory characteristics.
Farm technical and economical monitoring and benchmarking. The explicit goal is to compare different models of company development through the technical-economic evaluation system tested Milk Money.
