Quality valorisation of pig lots at slaughterhouse on welfare and carcass quality
The objective of the project is the valorisation of pork from pig born, bred and slaughtered in Italy. At the slaughtering stage, a pig payment system will be set up based on the welfare found on the farm and on the basis of carcass quality indexes such as homogeneity in weight of the lot, yield in primal and quality of the ham.
In the farm, a microclimatic control system will be made available to the production sites, and at slaughter, a calculation sheet for the valorisation of the lots.
The first will allow the sites to organize themselves in the best way to guarantee welfare conditions for animals. The second will be a useful system for the introduction of a pig quality payment system.
The project foresees a first activity on the farm where the measuring instruments for animal welfare parameters will be installed, such as: harmful gases, light, humidity, temperature. With regard to the slaughterhouse, a system for measuring the quality of the consignments will be developed with the aim of enhancing the meat of the national swine, born, raised and slaughtered in Italy.
Verify in the breeding the most suitable self-control procedures for the aspects concerning the environmental control and the materials for exploration and manipulation.
Verify in breeding the validity of a computer system for the verification of the self-control procedures of support for the assignment of the possible quality rewards related to animal welfare.
Verify in the slaughterhouse a quality payment model based on defined indices, such as: homogeneity of the assigned batch, yield in the loin, thigh yield, thigh defectiveness. This represents a strong process innovation aimed at promoting PDO quality.
Verify the possibility of defining optimal ranges within which the carcasses will have to move, by weight, in addition to the yield of the two noblest cuts in the carcass.
Verify the possibility of using this information to promote national pork.
