Development and enhancement of a maize supply chain in Canavese area based on the cultivation of local germplasm
The national and regional maize sector is undergoing a severe economic crisis; particularly in the Canavese area with medium-small farms. However, food supply chains represent an exception and the qualitative specialization of cereal crop guarantee higher income for farmers and supply chain operators. It is necessary to set up a food supply chain based on the cultivation of innovative maize varieties from the autochthonous germoplasm of Canavese, in order to provide maize flour with a high added value, a strong territorial connotation and a clear nutritional and health benefit , guaranteeing to the consumers adequate food safety and traceability.
To develop the innovative territorial supply chain, the project activities will evaluate: i) the innovative varieties best suited to the growing environment and with the highest productive, nutritional and health benefits; ii) the agronomic practices most suitable for their cultivation, considering both conventional and biological crop systems; iii) the innovative stone milling techniques to maximize the nutritional and organoleptic benefits of flours. The dissemination activity aims to encourage the diffusion of the supply chain in the territory and the promotion of products on the market.
The activities of the project will allow the evaluation of the innovative varieties that are currently and will become available during the project, in the regional growing area. The agronomic techniques (both in conventional and organic farming systems) and the milling methods (both stone and cylindrical) will be carefully verified more suited to enhancing the qualitative, nutritional and organoleptic properties of the innovative varieties. These adaptation activities will allow all the elements to be collected in order to develop a territorial supply chain for the production and processing of high-nutritional and healthy gluten-free flours. To achieve this goal it is therefore necessary to develop a system of traceability of the special supply chain, through a contract of cultivation between the mill and the agricultural cooperative and farms. The supply chain contract will have as its central element the identification of some innovative maize varieties with the characteristics of the native Canavese germplasm, belonging to different classes of maturity, selected as the most suitable to pursue the objective of a clear nutritional and technological improvement of the grain of maize, but with adequate agronomic reliability, productive potential and reduced health risks. The supply chain contract must also provide for a careful cultivation discipline in order to guarantee a more constant achievement of the productive and qualitative objectives of the supply chain and therefore of the economic sustainability of the same.
