Development of new products based on sheep's milk with a strong territorial connotation

Objectives

The project proposal aims at the promotion of the ovine milk sector in the Campania region, which currently represents one of the more traditional and less valued dairy supply chain. This objective will be achieved through a multidisciplinary approach, aimed at characterizing the milk from sheep reared in different Campania areas and the products derived from it. Moreover, new types of cheese, characterized by a robust relationship with the territory and interesting nutritional and functional features, will be developed.

 

Results

 

The project made it possible to achieve the objectives set in the planning phase and to validate important innovations such as to allow the improvement of the competitiveness of the Campania sheep dairy supply chain. In detail, the following objectives were achieved: - Valorization of Campania sheep's milk and its derivatives through analysis of the chemical and microbiological composition aimed at highlighting peculiar and distinctive characteristics; - Formulation of a starter culture with functional activity for spreadable cheese based on sheep's milk from Campania; - Protocol for the production of spreadable cheeses; - Protocol for the production of probiotic spreadable cheeses; - Testing of protocols for the use of probiotic microorganisms in spreadable cheeses; - Acquisition of sensory evaluation indications from consumers - Dissemination of innovations introduced. These results have introduced positive economic impacts on both the production and processing sectors. The processing company that participated in the project acquired the results of the experimentation early, also identifying potential and significant competitive advantages resulting from the introduction of the innovations. The transfer of innovation, also by virtue of the significant dissemination activities carried out, can, at this point, constitute the prerequisite for virtuous imitative dynamics. Therefore, the project actions made it possible to fully achieve the objectives set during the programming phase.

Activities

The project activities involve the quality assessment of ovine milk from sheep reared in different areas located in the provinces of Avellino, Caserta and Salerno. In the same manner, pecorino cheeses obtained with the different ovine milks will be evaluated. In particular, new generation chemical, microbiological and statistical approaches will be used to evaluate possible variations of the products in relation to the area of origin. In addition, the definition of new dairy products represent the basis for the establishment of real competitiveness of the Campanian dairy sector related to sheep milk.

Context

According to data provided by the National Livestock Register, more than 7.4 million of sheep are currently reared in Italy, around 200.00 in the Campania region. More than 5500 ovine farms are located in the Campania region, about half are dedicated to the production of meat, only about fifty have an exclusive production orientation towards milk and the rest of them produces both meat and milk. Since 2010, there has been a contraction in the number of farms, which however has not been followed by a suitable plan to recovery and protection of the ovine sector. However, in recent years, the awareness that sheep farming and, in particular, sheep breeding, can represent a great potential for local development and a resource against depopulation is emerging. In this context, the support for breeders' aggregations, the promotion of business networks, the enhancement of company multifunctionality and the safeguarding of the bond with the territory are factors on which we can act for a desirable enhancement of the sheep sector. Furthermore, the positive contribution that can be provided by working also on innovative dairy productions and processes, following the trends of a national and international market increasingly inclined to accept natural and functional features, is not negligible. The project activities aim at this themes, that is, the enhancement of ovine dairy products already present in the Campania region, for which it is necessary to bring out distinctive and peculiar identity characters, and the creation of new cheeses characterized by a robust relationship with the territory and interesting nutritional and functional features.

The innovations proposed in this project are placed within the Focus Area A2 and, in particular, can be summarized as follows:

- Enhancement of the authenticity of sheep's milk and cheese produced in the Campania region through their characterization allowing to the detection of compositional (chemical and / or microbiological) and nutritional markers;

- Testing and validation of innovative technologies aiming at the production of spreadable cheeses with functional characteristics made from Campanian sheep's milk.
