Natural by-products from vegetable matrices valorized for Preparations with high health properties

Obiettivi
Objectives

The objectives of the SNIPS project can be summarized as follows:
- Create an innovative vine-wine supply chain with grapes and wines rich in secondary metabolites for the production of preparations with a healthy action;
- Use of by-products of fruit and vegetable origin (unsold and / or processing waste) in order to
enhance the nutraceutical properties of vegetable matrices;
- Introducing the cultivation of Stevia rebaudiana in the Apulian production landscape as a possible
opportunity to tackle the crisis of flower and flower farms

Activities

1. Adoption of eco-sustainable vineyard management protocols aimed at the healthiness of the grapes and the increase of secondary metabolites;
2. Adoption of biotechnological protocols for the recovery of waste from plant matrices;
3. Introduction of the cultivation of Stevia rebaudiana and Adoption of eco-sustainable crop
management protocols;
4. Adoption of biotechnological protocols for the production of preparations of parts of plants, rich in
active components, from grapes, waste vegetable matrices (eg artichoke, asparagus, etc.) and stevia;
5. Development of product preparation, quality controls and industrial scale up
