Responsible ham: Diversification of processed pork based on high standards of animal welfare on pig farms

Obiettivi
Objectives

The objective of this Operational Group is to favour the development of new processed pork products with a protected designation of origin (PDO), which guarantee high standards of animal welfare.

Activities

• Feasibility study about the adoption of high standards of animal welfare in the pig farms involved;
• definition of commercial animal welfare standards and its applicability;
• marketing analysis of animal friendly processed pork products;
• definition and implementation of the interventions in the pilot farms;
• assessment of farm performance after interventions;
• analysis of production costs pre- and post-intervention;
• analysis of investment and operating costs, and of the potential economic benefits;
• training and technical-scientific dissemination.

Description

The market of pig meat is facing a bad market situation, which is in particular compromising the economic margins of pig farmers. Unlike the market demand and the legislative orientation of the EU of the last years the pig meat sector has not been able to shift towards a welfare friendly production as it risks to compromise its economic efficiency, profitability and sustainability. The Responsible Ham Operational Group identifies, develops and promotes process innovations based on high standards of animal welfare in order to obtain animal friendly processed pork products. In particular the innovations are complementary and interest different housing systems and management aspects.
