Production of niche plant species for the aromatization of beers

Context

The project proposes, not only the cultivation of new plants but their use in a product that is in strong and rapid expansion and is able to absorb interesting quantities of plants. The beer sector is becoming strategic for the agricultural sector. There are still problems related to the supply of raw materials at local level but the sector is rapidly evolving with the birth of micro malt and with initiatives related to the development and support of the hop supply chain. Alongside traditional beers, botanical beers are being appreciated. This type is based on the use of plants or plant extracts to flavor beers and give the product uniqueness characteristics. In Italy these beers are spreading but they are linked to very few plants and often folkloristic. The goal of the project is: on the one hand to propose new recipes for flavoring beer but on the other to propose a method for making them (through progressive screening). The project includes interventions dedicated to the study of beer with the final aim of the project is to increase the demand for this product and to simultaneously drag the demand for raw materials. The expected results are: definition of a method for creating botanical beer and use of local herbs. The project deals with plants not commonly cultivated and therefore there is also an ecological value of the proposal.

Pratice abstract
Description

This project is an integration model of the supply chain between the agricultural world and the world of beer production; through the creation of a prototype infuser for plant extracts. The agricultural partners will have the task of producing (and / or spontaneous collection) the plant material which will be extracted and used to flavor the prototypes of new beers. The results of this project will mainly be linked to connecting the final consumer with the agricultural world through a product of great appeal such as beer. The project is divided into several sequential phases ranging from agricultural production, the preparation of plant extracts and the aromatization of beers. The work will be carried out on two levels. On the one hand on small quantities of material to exclude plants incompatible with the normal aromatization of beers, on the other hand in microbrewery to simulate the production process of these beers in real production methods. The evaluation of the products will be taken in place for subsequent exclusions of extracts that do not present interest from the consumer's point of view up to a single beer that will be produced in a medium-sized plant and tasted in different breweries (about 30) in the area to obtain an overall judgment of the product.
