New organizational model for high quality wine
The purpose of this Innovation Plan is to optimize and strengthen the organizational and logistical processes of the identified supply chain, from the field to the consumer. That’s because it’s important to improve the economic sustainability of the agricultural enterprises involved and enhance territorial biodiversity complying with the environment and its peculiarities.
The description of the main project activities is set out below:

5. Definition of an innovative, organizational and informative model to manage the "High Quality" wine

BENCHMARKING ANALYSIS: The innovative solution envisaged to support the supply chain will be a prototype of a management software which can manage and promote the traceability of the quality product. With regard to this, a market analysis (benchmarking) will be carried out, in order to identify the best performance standards, with such an approach that can favor the choice, and the resulting achievement, of the competitive advantages for the project; also through the implementation of appropriate operative management tools which are already employed in other situations.
DEFINITION OF THE AQ WINE PRODUCTION SPECIFICATION (HIGH QUALITY): The
objective of this activity is the definition of the fundamental technical, productive and organisational parameters, in relation to each component of the supply chain. This parameters are essential to define an organizational and informative model to manage the High Quality wine (Vino AQ).
In the definition of the guidelines (which must include the new AQ wine product specification) all the components of the supply chain will be identified in order to implement a systematic approach in terms of supply chain integration.
DEFINITION OF AN INNOVATIVE, ORGANIZATIONAL AND INFORMATIVE MODEL TO
MANAGE THE "HIGH QUALITY" WINE: Based on the parameters identified in the previous one; in this phase we will define with precision and detail which components could be potentially engageable and their respective tasks. In this way the new supply chain organizational model will be created.
As mentioned, the application of the AQ wine supply chain specification, provides for a study of a dedicated experimental line which is also separated from the remaining wine (called "conventional"), to be implemented throughout the supply chain: from the farm to the final distribution point which interfaces directly with the consumer.
REALIZATION OF AN IT PROTOTYPE FOR THE IMPLEMENTATION OF THE
ORGANIZATIONAL MODEL OF THE AQ WINE SUPPLY CHAIN: In light of the organizational and logistical analyses carried out in the previous phase, the information management modalities will have been defined. These modalities should be traced throughout the supply chain to guarantee at all times the separated management of batches of grapes, must, wine and bottles linked to the AQ specification and their traceability.
In addition to the technical information relating to the cultural, chemical, physical and organoleptic parameters of the grapes and wine, commercial information useful to the participants of the supply chain will also be included. The above-mentioned participants will be able to access the IT system quickly and directly to consult the data and update them in turn.
The IT prototype will be realized in line with the necessities defined by the procedures manual of the organizational innovation model developed in the previous phase.
EXPERIMENTATION OF THE ORGANIZATIONAL MODEL
Technological-organizational innovations, or rather, the practical application of the prototype realized in the previous phase, will be tested on partner companies. The experimentation will be useful to test and possibly improve the established organizational and logistical processes.
