New supply chain of pre-germinated seeds for the agri-food industry
The main objective of the demonstrative project GO SEEDS is to identify plant species with seeds with particular characteristics (color, size, starch/protein content, etc.) to be included in the new supply chain of pre-germinated seeds. The pre-germination of seeds increases the bioavailability of different macro and micro elements and vitamins and can improve the nutritional and technological quality of flours, expanding the range of possible food uses and the pool of consumers, who are increasingly attentive to healthy lifestyles.
Main project activities are: 1. Selection of old maize varieties with colored grains (white, orange, blue, violet, black, etc.) and legume varieties to start pre-germination process, most suitable for agri-food use; 2. Pre-germination: development of pre-germination and biofortification protocols and evaluation of technological quality of the flour; 3. Trials of treatment, transformation and conservation of the pre-germinated to identify its most suitable destination (flour or mix of flour, extracts, flavors, roasting treatment and more).
The project pursues the following purposes:
1. to encourage the development of a new supply chain of pre-germinated seeds, expanding the range of agro-food uses of the flours obtained from them (eg special breads and pasta, biscuits, breadings, tortellini fillings, etc.).
2. to enhance cereal, leguminous grain and other species production, in order to add value to agricultural production, increasing the profitability of businesses;
3. to develop a pre-germination protocol for the individual species considered, overcoming some process critical aspects (eg bacterial contamination);
4. check the opportunity to biofortify seeds and flours with micro-elements during the pre-germination process.
