Innovation of tradition: innovative technology to enhance the quality of the native sparkling wines of the Murgia Barese

Obiettivi
Objectives

The project intends to pursue specific objectives: Characterization of autochthonous and non-native
varieties, with assessment of the potential for the production of sparkling wines; use of native
microbial starter for sparkling wine; application of starter candidates in the production of base wine
and sparkling wine on a pilot scale; production of basic and sparkling wines on medium-scale
industrial production; validation and transfer of new sparkling wine protocols into the company;
innovative marketing strategies.

Activities

1. Characterization and improvement of raw material production techniques;
2. Oenological selection of indigenous yeast strains;
3. Application of the starter candidates in base wine and sparkling wine production on a pilot scale;
4. Production of base and sparkling wines on a medium industrial scale;
5. Economic-financial analysis of open field and transformation activities;
6. Innovative marketing strategies.
