haMMurabi-Monococco Marche (Triticum monococcum-einkorn): from the field to the table, rediscovering an ancient cereal, suitable for sustainable agriculture and rich in nutritional properties

Objectives

The general aim of the project is to rediscover the cultivation of an ancient cereal and to introduce it into a dedicated food supply chain,improving the food farming economy of Marche region.
The role of the OG is to diffuse and promote the new variety, defining an agronomic protocol based on low-input or organic farming. From this point, the whole supply chain will be implemented. The final product will be promoted among consumers, highlighting its particular nutritional value.
 

Activities

Phase 1: optimization of agronomic practices for einkorn Hammurabi; 
Phase 2: delivery of the product to the mill, production and analysis of flour; 
Phase 3: Production of Hammurabi pasta; 
Phase 4: dissemination of the project results. Once launched on the market , einkorn Hammurabi will be able to offer new opportunities to operators in the agri-food sector and to guarantee the growers who choose to produce the raw material, an allocation of the crop with more than satisfactory margins"

Context

The durum wheat market is going through a difficult time in the Marche Region as in the rest of Italy. The high competitiveness of productions imported from foreign countries (in particular, emerging countries such as Ucrania, Belarus, Bulgaria and other non-EU countries), where economic and environmental conditions are always more favorable than those of our small and fragmented companies, forces producers to lower prices and significantly reduce their profit margins. In this context, the project intends to relaunch the cultivation of a “new” cereal, the Hammurabi eel and promote its supply chain in the Marche agri-food context.The rediscovery of this ancient cereal would favor local farms and their needs, increasing profitability and avoiding the abandonment of land that is often spoken of in recent years.The creation of a supply chain will guarantee a certain allocation of the product and at a price set by contract so as to offer economic guarantees to the farmer who is no longer forced to interface with the international markets for agricultural commodities. The crisis in the agri-food sector affects the entire agricultural sector and even the local processing industries certainly cannot compete with the major brands on the international market.Therefore, the opportunity offered by the project is to create a pasta completely different from the traditional, a niche product rich in important nutritional characteristics that make it unique in the market

Pratice abstract
Description

The innovation to be introduced consists in the cultivation and transformation of an ancient cereal, but at the same time new because until now practically unknown, with very special agronomic and qualitative characteristics. Innovation is thus brought to the entire agri-food sector, with the development of agronomic and ad hoc processing techniques, and finally, of a line of products based exclusively on Hammurabi monococco flour.The final objective remains that of "quality and safety of food products and functional foods for a healthy and balanced diet". This completes a supply chain that goes from the producer to the final consumer and whose product is healthy, traced and with strong ties to the territory. The results of the project will also be disseminated to subjects external to the GO through training events, conferences, field trials and demonstration events aimed at involving the entire agri-food sector
